Our Ageing Method

Our wines age in stainless steel and in new and use French oak barrels, according to their level.

In harvest white wines, we explore the potential of grape varieties fermenting in stainless steel. Subsequently, the wines age in the same tanks under “batonnage” process. After bottling, remains in the bottle for a period of around 6 months – MARCO 3.

Others, after this stage, are submerged in the sea for another stage under very special conditions also for a minimum period of 6 months – They are our “MARCO 3 IN MARE”.

The harvest red wines, after fermenting in stainless steel, they age in new and use French oak barrels, according to their level for a period of 12 months. After bottling, remains in the bottle for a period of around 6 months – MARCO 3

Cork

The use of the cork as a wine stopper dates back thousands of years. The civilizations of the Egyptians, Greeks and Romans already used cork stoppers to enclose this noble nectar. But it was Dom Pérignon, a French Benedictine monk who lived in the 17th century, who opened the way for an empire based on glass (of the wine bottle) – cork (cork stopper) alliance.

Don Pérignon’s impulse was decisive in creating the perfect combination: bottle of wine and cork stopper, whose simultaneous development allowed the development of the modern wine industry.

But why has the use of this raw material become so important for the manufacture of wine stoppers? What makes it so special and unique?

Each cork stopper is an entirely natural and sustainable product and functions as an exquisite lid formed mainly by suberin and filled with a gas similar to air. When subjected to compression, they tend to return to their original size and shape, adapting perfectly to the neck and ensuring a tight seal. Intuitively we know that a wine sealed with cork simply tastes better and science offers us easy to see evidence of that. The intrinsic characteristics of cork – light, easy to compress, waterproof, resistant to decomposition and resilient – make it the only seal that respects the evolution of wine, preventing its deterioration over time.

In our wines, we exclusively use premium cork stoppers, as only a bottle sealed with premium cork stoppers subject to strict quality control can ensure maximum expression and splendor of the wine.
